haricots verts À l'oignon

a really quick and simple side dish


The humble green bean (Haricot vert) is often not treated with the respect it deserves. Yet using it to produce a simple side dish that will accompany a very wide range of meals is so easy. Try them with onions...delicious!


Ingredients: (Serves 4-6)

·         500g / 1lb green beans

·         30g / 1oz butter

·         1 medium size onion

·         salt and pepper



Method

·         Trim the beans and cook in boiling well-salted water for about 10 mins.

·         Meanwhile, finely chop the onion.

·         Melt the butter and fry the onion until lightly brown.

·         Drain the beans and toss them over heat to dry.

·         Pour the butter and onions over the beans.

·         Season with salt and pepper and serve immediately
