You will find many salmon recipes in France – and they are all divine! So if you are in France or planning a holiday soon you will have the opportunity to taste some of them for yourself.

France has many rivers and of course its coastline borders both the Atlantique and the Mediterranean sea so of course they have an abundance of fresh fish and an amazing number of the most delicious fish dishes imaginable.

One of the rivers  popular with salmon fishing is the Gave d'Oloron, a river in the  south west of France near the border with Spain and many fishing enthusiasts like to take a fishing holiday in these parts where they can relax and enjoy the beautiful French countryside as well as their favorite pastime.

Wherever you go in France you will find fish on the menu in hotels and restaurants and salmon is one of the most popular choices.

Salmon is an expensive fish with a delicious flavour and excellent texture so it should be cooked in the simplest of manners to respect this beautiful cuisine.

It can be bought whole which you may prefer if you want a dish for a larger dinner party or you can buy it in steaks or cutlets.

It is a beautiful fish and when bought fresh should have a small head broad shoulders – this is just a tip as the head can weigh up to a fifth of its weight and you want that in the fish that is to be eaten not the head.

It is a lovely round fish with the scales bright and silvery. The flesh is deep pink when raw but changes to a pale pink colour when cooked.

You can of course buy it frozen all year round these days and some of it is very good indeed but if you can afford the fresh salmon, this is the better choice for texture and flavour.

Salmon is also a healthy choice  these days as it is full of those lovely omega 3 fish oils; and with everyone becoming more concerned about what we eat, it is good to hear that such a tasty fish is also a  healthy option.
