tomato and egg
An egg hors d'oeuvres recipe that is easy and quick to make
at home! This is such a simple yet colourful and tasty dish and is
found in most charcuteries throughout France.
Tomates farcies can be served as an hors d'oeuvres
or appetiser, or as a light lunch. It is a great recipe to make up when you
have unexpected guests too, as it can be made very quickly. If you can boil an
egg you can make this one!
It is so colourful, inexpensive and a healthy option too. It
is a dish that the kids will love to help you make and encourage them to eat
Prep: 20 minutes
Cooking: 15 minutes
4 ripe tomatoes
2 hard-boiled eggs
1 tbsp each of freshly chopped parsley, chopped
chives, and chopped tarragon or basil
175mls fresh mayonnaise
Lettuce to garnish
Salt and black pepper
Place the mayonnaise in a small bowl and mix in
the chopped herbs.
Cut the eggs into thin slices (Discard the end
