The green of the cucumbers is so refreshing and a tasty nutritious salad to include with your starters.
(The time listed above is for the squeezing of juice from the cucumber.)
Ingredients

- 1 whole cucumber (Use an English cucumber and you won't have to peel it.)
- 1 tablespoon parsley, freshly chopped
- salt
- Vinaigrette dressing - here is a recipe for French Dressing
Instructions
- The cucumber is usually peeled in France, but you can leave the peel on if you prefer.
- Slice the cucumber into the thinnest slices you can. A mandolin is used for this in France, or you can use the wonderful attachments you now have with your food processors.
- Place the sliced cucumber on a large plate and sprinkle with salt.
- Place another plate on top of them and put a weight on top of this.
- Leave for about an hour.
- Drain off the liquid and wash the cucumber in a sieve under cold running water, then dry it.
- Sprinkle with parsley and the vinaigrette.
