You can serve it with either croutons or your favourite bread. Of course for a Halloween party you can have it with hot dogs or jacket potatoes, in fact, anything you want, either way, it will be so warming and appetizing.
Ingredients
Pumpkin Soup
2 lbs pumpkin, peeled, seeded, and cut into large pieces
4 tbsp (2 ozs) of butter
½ cup (¼ pint) water
4½ cups (2¼ pints/1.3 litres) milk
Salt and grated nutmeg
¼ cup (2 ozs/50 gms) rice
Instructions
Making The Soup
First, melt the butter in a heavy-bottomed pan.
Cook pumpkin slowly over low heat for about 15 minutes, stirring frequently.
Add the nutmeg, salt, and warm water.
Cook rapidly until soft.
Use a blender to bring to a puree.
Put milk in a pan, add purée and rice.
Bring to the boil, then simmer over low heat for about half an hour.
You can serve it with either croutons or your favourite bread.
