a very easy winter warmer

Who could resist this gorgeous pumpkin soup recipe! Made with the most beautiful bright orange vegetable – they're a vivid sight in the markets throughout France. Pumpkins make a delicious warming soup as the autumn chill hits the air. But I think it is equally delicious when chilled!

Pumpkins are used everywhere for Halloween and you can make everyone happy with a big bowl of soup made from the contents of this gorgeous vegetable. So don't throw away the contents of them when making your Halloween lanterns or Jack-o'-lanterns, give everyone a taste of this recipe, it's so good.

·         2lbs pumpkin, peeled, seeded and cut in large pieces

·         2 ozs (4 tablespoons) of butter

·         ¼ pint water

·         2¼ pints (1.3 litres) milk

·         Salt and grated nutmeg

·         2 ozs (50gms) rice


·         First melt the butter in a heavy bottomed pan.

·         Cook pumpkin slowly over a low heat for about 15 minutes, stirring frequently.

·         Add the nutmeg, salt and warm water.

·         Cook rapidly until soft.

·         Use a blender to bring to a puree.

·         Put milk in a pan, add purée and rice.

·         Bring to the boil, then simmer over a low heat for about half an hour.

You can serve it with either croutons or your favourite bread. Of course for a Halloween party you can have it with hot dogs or jacket potatoes, in fact anything you want, either way it will be so warming and appetizing.
