Salade de Chou Rouge

A Red Cabbage Salad to add to your hors d oeuvres or starters

This red cabbage salad recipe or salade de chou rouge is a colourful,tasty yet easy salad recipe for you to make at home.

All you need is a fresh firm red cabbage to make this red cabbage recipe into a dazzling display.


• 1 lb (450gm) red cabbage

• 1 tablespoon chopped chives or onion and/or 3 tablespoons sliced radishes.

• Vinaigrette a la moutarde (please see page for hors d oeuvres and French dressings)


• Remove the outer leaves of the cabbage.

• It is easier now to cut the cabbage into quarters and cut away the core.

• Slice the cabbage very, very thinly.

• Sprinkle with salt and leave for about an hour.

• Drain and dry with kitchen towels or a clean teacloth.

• Mix the herbs and the dressing together.

• Pour over the cabbage, mix well.

• Leave for about an hour before serving.

This is so simple to make but will look stunning on your table.
