An egg hors d'oeuvres recipe that is easy and quick to make at home! This is such a simple yet colourful and tasty dish and is found in most charcuteries throughout France.
Tomates farcies can be served as an hors d'oeuvres or appetiser, or as a light lunch. It is a great recipe to make up when you have unexpected guests too, as it can be made very quickly. If you can boil an egg you can make this one!

Ingredients
· 4 ripe tomatoes
· 2 hard-boiled eggs
· 1 tbsp each of freshly chopped parsley, chopped chives, and chopped tarragon or basil
· 175mls fresh mayonnaise
· Lettuce to garnish
· Salt and black pepper
Method
1. Place the mayonnaise in a small bowl and mix in the chopped herbs.
2. Cut the eggs into thin slices (Discard the end bits)
3. Take your tomatoes and cut slices down to the base but not all the way through. Try and cut a slice for each slice of egg you have
4. Open the tomato into a fan shape and sprinkle with a little salt
5. Serve garnished with the lettuce and herb mayonnaise
6. Sprinkle with a little black pepper.
