Make it easily, quickly, and bring a little summer Provence into your kitchen!


  • 1 large eggplant (aubergine)
  • 2 zucchini (courgettes)
  • 3 medium-sized potatoes
  • 3 ripe tomatoes
  • 2 onions
  • 1 small bunch thyme
  • Olive oil
  • Salt and pepper


  1. Turn oven on to 220C/425F/7 gas mark.
  2. Cut the vegetables into thin slices.
  3. Sprinkle a little olive oil into the bottom of your Tian (or large ovenproof dish)
  4. Begin layering the vegetables in Tian starting with the onions, potatoes, eggplant, zucchini, and tomatoes.
  5. Sprinkle each layer with salt and pepper and a little crumbled thyme.
  6. Finish the top layer with tomatoes and sprinkle olive oil over the top.
  7. Place in a hot oven and bake for about forty minutes.
  8. This is often eaten hot but can also be served cold too.
