¼ pint milk

1½ lbs fresh white fish such as haddock, cod, whiting etc
▢
Black pepper
▢

teaspoon
ground cinnamon

¼
teaspoon
ground cloves

Flour for dusting

Butter and olive oil for frying

Instructions
Sprinkle the onions with salt and leave aside for half an hour
Soak the breadcrumbs in the milk for about 10 minutes then squeeze them until most of the milk has gone
Beat the eggs and add this to the breadcrumb mixture
Chop the fish and the onions very finely, you can use your food processor here for convenience.
Season with the cinnamon, cloves and black pepper.
Leave the mixture in the refrigerator for half an hour.
Finally, form the mixture into round cakes and dust with flour.
Fry them gently in the butter and oil until golden brown.
Serve with a
tomato sauce
or with a
fresh green salad.
