A simple French green salad made with fresh, tender salad greens and a classic vinaigrette. This crisp salade verte takes just minutes to prepare and makes a lovely first course or side dish.
Prepare the lettuce or salad greens by carefully washing them in cold water, then dry in a salad spinner or clean tea towel until dry. (Washing, wrapping in a kitchen towel, and storing in the fridge a few days ahead will give the greens time to crisp up.)
Mix the vinaigrette dressing in the salad bowl.
Add the lettuce or leaves. Tear the leaves if they are large but never shred them.
Just before serving, toss very lightly with the dressing until all leaves are covered and serve.
Notes
Dry the leaves thoroughly. This is probably the most important step. Wet leaves dilute the vinaigrette and make it difficult for the dressing to cling to the greens.
Dress just before serving. Vinaigrette begins to soften delicate greens as soon as it is added, so wait until you're ready to eat.
Use a light hand with the vinaigrette. Start with less than you think you need. You can always add more, but you can't take it away.
Toss, don't stir. Gently lift and turn the leaves so they stay whole and crisp.
Use seasonal greens. There's no need to make this salad exactly the same way every time. Let the freshest greens available be your guide.
Make enough for a few days by storing washed greens in the refrigerator, wrapped in a kitchen towel, before adding the dressing, will have it at the ready.
