Spicy ground beef crepes are full of flavor, ease, and lots of enjoyment. This crepe recipe allows for a great deal of creativity and making it your own.

Batter
- 1 cup/100 gr plain flour
- a pinch of salt
- 2 large eggs
- 1 tbsp olive oil
- 1/3 cup water
- 1 cup (300 ml) 1 or 2% milk (semi-skimmed milk)
Filling
- 1 lb/454 gr ground beef
- 1 medium onion
- 2 medium garlic cloves
- 2 cups diced tomato
- 2 tbsp chives
- 1 bouquet garni or
- a little Espelette pepper to taste
- 1/2 cup beer
- 1 tbsp red wine vinegar
- 1 tbsp sugar
- A little sour cream and more chives on top.
Instructions
How To Make The Crepe
- Mix dry ingredients in a bowl.
- Make a well in the center, then add the eggs, oil, water, and milk.
- Stir with a whisk until smooth or place all ingredients in a blender and buzz until smooth.
- Let stand for at least 1 hour, longer is better, even overnight.
How To Make The Filling
- Brown the ground beef in a pan. Place in a bowl, discard the fat and scrape pan.
- Place olive oil in pan, add the onions and soften them without browning.
- Put the meat back in the pan.
- Add the beer and, if needed, add a little water to cover the meat.
- Season with salt and black pepper and add the bouquet garni or pepper.
- Simmer the meat uncovered until the liquid is reduced.
- While the liquid in the ground beef mixture is reducing, make an additional flavorful sauce to add to the beef.
- Heat the vinegar with the sugar in a small saucepan until it bubbles and forms a dark caramel (watch constantly to prevent burning).
- Stir in two tablespoons of boiling water and then add this mixture to the pan, this gives it a good color and added flavor!
Putting Crepes Together
- Lay a crepe on a plate.
- Place a spoonful of the filling down the center of the crepe.
- Fold one side of the crepe over the filling, then the other side.
- Lay in a casserole dish.
- Continue until all crepes are filled.
- Sprinkle cheese on the crepes and place in the oven to melt the cheese and keep the crepes warm until serving.
