For The Crepes
- Stir crepe batter with a whisk until smooth, do not beat.
- Let batter stand for an hour before cooking for best results.
- Heat pan slowly (use a non-stick crepe pan unless you are experienced) until it is hot about 200°C /400°F.
- Butter pan quickly and pour in batter. Cook fast or they will be rubbery.
- When edges start to lift, it is time to turn.

- Step 1: Brown the ground beef in a pan. When completely cooked place in a bowl, discard the fat and scrape pan.
- Step 2: Place olive oil in pan, heat, add the onions and soften them without browning.
- Step 3: Put the meat back in the pan, add the beer, and if needed, add a little water to cover the meat. Season with salt and black pepper
- Step 4: Add the bouquet garni, simmer the meat mixture uncovered until the liquid is reduced.
- Step 5: Add all the other vegetables, mix together and continue to simmer gently, stirring occasionally. While the liquid in the ground beef mixture is reducing, make an additional flavorful sauce to add to the beef.
- Step 6: Heat the vinegar with the sugar in a small saucepan until it bubbles and forms a dark caramel (watch constantly to prevent burning). Then, stir in two tablespoons of boiling water and add this mixture to the pan, this gives it a good color and added flavor!

- Lay in a casserole dish.
- Continue until all crepes are filled.
- Sprinkle cheese on the crepes and place in the oven to melt the cheese and keep the crepes warm until serving.
- Remove from oven, sprinkle each one with chives and a dollop of sour cream!

Top Tip For Savory Crepe Batter
Use olive oil, vegetable oil or sunflower oil in the batter as each one will enhance your crepes with a slightly different flavor, your preference.

- 1 medium onion
- ½ cup beer plus a little water if needed
- 1 bouquet garni or
- a little Espelette pepper to taste
- 2 medium garlic cloves
- 2 cups diced tomato
- 2 tablespoon chives
- ½ cup chopped celery
- 1 tablespoon red wine vinegar
- 1 tablespoon sugar
- A little sour cream and more chives on top.
- ½ cup grated cheese of your choice cheddar, mozzarella.
