You can use a blender if preferred and if you choose this method, simply place all the ingredients for the batter (no cherries) in your blender on top speed for about one minute.
Otherwise, place your flour, sugar and salt into a bowl and beat in the eggs one at a time. I use a balloon whisk as it is much easier and there are never any lumps with using this great little tool. However, you can use a wooden spoon if you wish. Then gradually beat in the other liquids.
Lightly butter an oven proof dish about 1 ½ ins deep and place the cherries in the dish.
Pour the batter mixture over the cherries and place in the pre-heated oven.
Bake for about one hour or until the flan is golden brown.
It will have risen and puffed up but will go down again so this is normal!
Serve warm with some powdered sugar sprinkled on it and if you are feeling very naughty, a little cream or creme fraiche or ice cream on the side!
