Cherry Clafoutis Recipe

Clafoutis aux Cerises

This is a cherry dessert which in France is called 'Clafoutis aux Cerises' and is a very simple dessert for family meals. It has its origins in peasant cooking as the ingredients are very much what was in season and used accordingly. Try this tasty Plum Clafoutis, Strawberry Ice, or Fruit Coulis that will perk up many dessert or main dishes.

It is however a very tasty and 'so good for you' family dessert that you will want to make it time and time again.

Substitutions

It is usually made with cherries but is just as delicious made with many other fruits.

It is a very versatile dish and although cherries are traditional in France other fruits in season can be used for this dish with very good results such as:

  • blackberries
  • raspberries
  • blueberries
  • pears
  • apples
  • plums

Cherry Clafoutis Recipe

Ingredients

  • 3 cups cherries washed, pits, and stalks removed.
  • 1¼ cups milk 275g, 6oz
  • ⅓ cup sugar 50g, 2oz
  • 3 fresh eggs
  • 1 tablespoon vanilla extract
  • ½ cup flour 70g, 2 ½oz
  • ¼ teaspoon salt

Instructions
 

  • Pre-heat your oven to 177°C, 350°F, Gas 3
  • You can use a blender if preferred and if you choose this method, simply place all the ingredients for the batter (no cherries) in your blender on top speed for about one minute.
  • Otherwise, place your flour, sugar and salt into a bowl and beat in the eggs one at a time. I use a balloon whisk as it is much easier and there are never any lumps with using this great little tool. However, you can use a wooden spoon if you wish. Then gradually beat in the other liquids.
  • Lightly butter an oven proof dish about 1 ½ ins deep and place the cherries in the dish.
  • Pour the batter mixture over the cherries and place in the pre-heated oven.
  • Bake for about one hour or until the flan is golden brown.
  • It will have risen and puffed up but will go down again so this is normal!
  • Serve warm with some powdered sugar sprinkled on it and if you are feeling very naughty, a little cream or creme fraiche or ice cream on the side!
