Cherry Clafoutis Recipe
Cherry Clafoutis Recipe is a very versatile dish as other fruits in season can be used such as blackberries, raspberries, plums, pears, or apples.
Ingredients
- 3 cups cherries washed, pits, and stalks removed.
- 1¼ cups milk 275g, 6oz
- ⅓ cup sugar 50g, 2oz
- 3 fresh eggs
- 1 tablespoon vanilla extract
- ½ cup flour 70g, 2 ½oz
- ¼ teaspoon salt
Instructions
- Pre-heat your oven to 177°C, 350°F, Gas 3
- You can use a blender if preferred and if you choose this method, simply place all the ingredients for the batter (no cherries) in your blender on top speed for about one minute.
- Otherwise, place your flour, sugar and salt into a bowl and beat in the eggs one at a time. I use a balloon whisk as it is much easier and there are never any lumps with using this great little tool. However, you can use a wooden spoon if you wish. Then gradually beat in the other liquids.
- Lightly butter an oven proof dish about 1 ½ ins deep and place the cherries in the dish.
- Pour the batter mixture over the cherries and place in the pre-heated oven.
- Bake for about one hour or until the flan is golden brown.
- It will have risen and puffed up but will go down again so this is normal!
- Serve warm with some powdered sugar sprinkled on it and if you are feeling very naughty, a little cream or creme fraiche or ice cream on the side!
