This tasty recipe consists of cold diced or shredded chicken, mixed with a lightly spiced curry cream sauce with mango chutney, golden raisins, and limes.
3cupchicken diced or shredded from a pre-cooked chicken (white meat is best)
3tablespoonmayonnaise
2tablespooncrème fraicheor plain yogurt
1-2teaspooncurry powder
1teaspoonground cinnamon
1teaspoonZest of 1 lime
2teaspoonJuice of 1 lime
½teaspoonsalt
Ground black pepper
1tablespoonmango chutney
½cupGolden sultanas
Watercress

Instructions
Mix everything except the chicken in a bowl. Adjust to taste and adjust quantities for more people.
Mix the combined ingredients with the shredded or diced chicken.
Serve with baked potatoes, pasta, quinoa, rice, or other salads.
You can leave this chilled in the fridge until you are ready to serve.
Garnish with watercress for a lovely accent of color.
Notes
Using pre-cooked chicken makes this an extremely quick and easy dish to prepare.
The chicken can be diced or shredded.
Make my easy hand blender mayonnaise for a special salad dressing with lots of flavor. If you choose to do it this way, you can add all the ingredients for this recipe while making the mayo, except the raisins.
After mixing the salad dressing with the chicken, let it sit in the fridge to get well chilled.
