This French garlic soup recipe is an easy creamy soup to make (without the cream). It is mellow, which may surprise you, as it has lots of garlic. And full of powerful ingredients to help you fight sickness. But enjoy it any time!
Peel the garlic cloves - the quickest way is to drop the cloves into boiling water for about 1 minute then run cold water over them and peel.
Place all the ingredients into a large heavy heavy-bottomed pan and bring to a boil. Lower the heat and simmer for about 45 minutes.
As the soup is cooking, beat or whisk the egg yolks until they are thick.
Gradually beat in the olive oil, drop by drop.
When you are ready to serve your soup, add a small amount of hot soup to the egg mixture and mix well. Then pour this mixture back into the pan and mix in well.
You can strain the soup through a sieve or in a blender or liquidizer to a smooth consistency.
Serve with rounds of toasted French bread and Parmesan cheese.
