This is a recipe for fresh green or frozen pea soup. Cozy up with a bowl of this French soup for lunch or dinner as a side or the main meal. Elegant, easy, and delicious for family and guests.

medium onion
or 2 or three shallots finely chopped

fresh shelled peas
about 3lbs of fresh garden peas; or 3 cups frozen peas

cups
water, chicken or ham stock
▢

tablespoons
fresh cream or crème fraîche

Salt and pepper to taste

Instructions
Melt the butter in a heavy-bottomed saucepan and add the onions or shallots, gently cooking them by sweating them until they are soft.
Add the peas, water or stock.
Add salt and pepper to taste and bring to a boil.
Simmer immediately and cook for about 20 minutes depending on the size of the peas as you may need a little longer if the peas are large.
When cooked, process the peas or blend them until smooth in a food processor or by hand blender in the pot and stir in the cream or crème fraîche.
Heat thoroughly without boiling the soup.
Taste at this point and adjust seasoning to taste.
Serve hot with freshly made croutons.

Always taste before serving, as peas vary in sweetness.
Add mint for a refreshing twist.
For a silky texture, strain soup after blending.
A splash of white wine while sweating onions adds depth.
