ripe tomatoes
▢

hard-boiled eggs
▢
1
tablespoon
each of freshly chopped parsley
chopped chives, and chopped tarragon or basil

mls fresh mayonnaise
▢
Lettuce to garnish
▢
Salt and black pepper

Instructions
Place the mayonnaise in a small bowl and mix in the chopped herbs.
Cut the eggs into thin slices (Discard the end bits)
Take your tomatoes and cut slices down to the base but not all the way through. Try and cut a slice for each slice of egg you have
Open the tomato into a fan shape and sprinkle with a little salt
Serve garnished with the lettuce and herb mayonnaise
Sprinkle with a little black pepper.
