Tomates Farcie

A delicious tomato and egg appetizer recipe that is easy and quick to make with a simple tasty dip! This is such a simple yet colorful and tasty dish and is found in most charcuteries throughout France.

Tomates farcies can be served as hors d'oeuvres or appetizers, or as a light lunch. It is a great recipe to make up when you have unexpected guests too, as it can be made quickly. If you can boil an egg you can make this one!

It is so colorful, inexpensive, and a healthy option too. It is a dish that the kids will love to help you make and encourage them to eat healthy.

Cook Time 15 minutes mins
Servings 4 people

Ingredients

  • 4 ripe tomatoes
  • 2 hard-boiled eggs
  • 1 tablespoon each of freshly chopped parsley chopped chives, and chopped tarragon or basil
  • 175 mls fresh mayonnaise
  • Lettuce to garnish
  • Salt and black pepper
Prevent your screen from going dark

Instructions
 

  • Place the mayonnaise in a small bowl and mix in the chopped herbs.
  • Cut the eggs into thin slices (Discard the end bits)
  • Take your tomatoes and cut slices down to the base but not all the way through. Try and cut a slice for each slice of egg you have
  • Open the tomato into a fan shape and sprinkle with a little salt
  • Serve garnished with the lettuce and herb mayonnaise
  • Sprinkle with a little black pepper.
