Stuffed Tomato Recipe

Description
A simple appetizer that comes together quickly and looks and tastes wonderful!
Ingredients
- 4 ripe tomatoes
- 2 hard-boiled eggs
- 1 tbsp each of freshly chopped parsley, chopped chives, and chopped tarragon or basil
- 175 mls fresh mayonnaise
- Lettuce to garnish
- Salt and black pepper
Instructions
- Place the mayonnaise in a small bowl and mix in the chopped herbs.
- Cut the eggs into thin slices (Discard the end bits)
- Take your tomatoes and cut slices down to the base but not all the way through. Try and cut a slice for each slice of egg you have
- Open the tomato into a fan shape and sprinkle with a little salt
- Serve garnished with the lettuce and herb mayonnaise
- Sprinkle with a little black pepper.
