2fish filletlarge fillet, per person, plaice, sole, flounder or halibut
2tablespoonbutter
1tablespoonolive oil
1tablespoonlemon juice
1tablespoonparsleyItalian or flat, chopped
¼cupseasoned flourfor dusting/dredging fish

Instructions
Wipe and dry the fish fillets.
Dip the fish in the seasoned flour and cover lightly.
Heat the 1 tablespoon butter and oil in a heavy-bottomed pan.
When the butter is foaming turn the heat down and put the fish in the pan.
Cook for about 3 minutes then turn the fish over and cook the other side until golden brown 3-5 minutes. (Fish is cooked when it easily flakes with a fork.)
Put the fish on a hot dish, drizzle with lemon juice, and sprinkle with chopped parsley.
At this stage quickly wipe out the pan add 1 tablespoon butter to the hot pan and heat until it turns brown.
Quickly pour over the fish and serve!

How To Make Seasoned Flour For Fish
