This plaice fish, is an easy classic French fish recipe. Tender pan-fried plaice fillets are lightly coated in seasoned flour, quickly pan-fried until golden, then finished with lemon, parsley, and a little browned butter. Ready in 15 minutes.

All of these types of fish have a mild flavor, with white meat making them good substitutes for one another and easy to dress up with various flavors.

Plaice is high in protein and low in fat and carbohydrates. It is a good source of healthy omega-3 fatty acids and vitamin D, and it has a high selenium content.

What Does Plaice Fish: Miller's Wife Style Mean?

"Miller's wife style" fish is the English interpretation of Poisson ร  la Meuniรจre, a traditional French preparation in which delicate fish fillets, such as plaice, are lightly coated in flour and gently pan-fried in butter.

The fish is then finished with fresh lemon juice, parsley, and nutty browned butter.

The French word meuniรจre means "miller's wife," a name thought to refer to the flour used to lightly dust the fish, reminiscent of flour from a mill.

How To Cook Plaice Fish

  1. Wipe and dry the fish fillets. If the fillets are not dry, the flour dredge will not adhere to the fish.
  2. Dip the fish in the seasoned flour, covering the fillets lightly.
  3. Heat the butter and oil in a heavy-bottomed pan. The butter adds flavor, and the oil prevents the butter from burning.
  4. When the butter is foaming, turn the heat down and put the fish in the pan.
  5. Cook for about 3 minutes, then turn the fish over and cook the other side until golden brown. This is also a similar pan-frying method to cooking pan-fried scallops.
  6. Put the fish on a hot dish, drizzle with lemon juice, and sprinkle with chopped parsley.
  7. At this stage, quickly wipe out the pan, add 1 ounce of butter to the hot pan, and heat until it turns brown.
  8. Quickly pour over the fish and serve!

How To Make Seasoned Flour For Pan-Fried Fish

Place all ingredients in a bowl and combine with a whisk to ensure even distribution of all the flavors. Store in an airtight container. Herbs can make a dish truly special; learn more from my French Herbs Capture The Flavor. Add or omit any item in the list that you like.

  • 2 cups all-purpose flour (or a flour of your choice, such as rice flour, or a combination of wheat, rice, potato, or corn flour; or make it vegan with a flour blend replacement)
  • 2 tablespoons salt
  • 1 tablespoon crushed celery seed
  • 1 tablespoon pepper
  • 2 tablespoons dry mustard
  • 4 tablespoons paprika
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 teaspoon ginger
  • 1 teaspoon thyme
  • 1โ„2 teaspoon basil
  • 1โ„2 teaspoon oregano
  • ยผ cayenne pepper

What To Serve With White Fish Fillets?

Serve with a simple green mesclun salad and fondant pan-fried potatoes, original French fries, or simple baker's potatoes, they are all delicious!

Alternatively, serve with your favorite vegetables such as small broad beans or easy French buttery beans.

Ingredients

  • 2 fish fillet or 1 large large fillet, per person, plaice, sole, flounder or halibut
  • 2 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon parsley Italian or flat, chopped
  • ยผ cup seasoned flour for dusting/dredging fish
