Filets De Poisson A La Meunière

I love both plaice and sole so I can recommend them for an easy quick lunch or dinner. Both types of fish have a mild flavor with white meat making them good substitutes for one another.

- plaice or sole
- butter and olive oil
- lemon juice
- parsley
- seasoned flour
🔢Instructions
- Wipe and dry the fish fillets.
- Dip the fish in the seasoned flour and cover lightly.
- Heat the butter and oil in a heavy-bottomed pan.
- When the butter is foaming turn the heat down and put the fish in the pan.
- Cook for about 3 minutes then turn the fish over and cook the other side until golden brown. This is also a similar pan fry method as cooking scallops.
- Put the fish on a hot dish, drizzle with lemon juice, and sprinkle with chopped parsley.
- At this stage quickly wipe out the pan add 1oz butter to the hot pan and heat until it turns brown.
- Quickly pour over the fish and serve!
How To Make Seasoned Flour
