Instructions
How To Make The Filling
Brown the ground beef in a pan. Place in a bowl, discard the fat and scrape pan.
Place olive oil in pan, add the onions and soften them without browning.
Put the meat back in the pan.
Add the beer and, if needed, add a little water to cover the meat.
Season with salt and black pepper and add the bouquet garni, pepper, and all the other vegetables.
Simmer the meat uncovered until the liquid is reduced.
While the liquid in the ground beef mixture is reducing, make an additional flavorful sauce to add to the beef.
Heat the vinegar with the sugar in a small saucepan until it bubbles and forms a dark caramel (watch constantly to prevent burning).
Stir in two tablespoons of boiling water and then add this mixture to the pan, this gives it a good color and added flavor!
How To Make The Crêpes
(
Detailed instructions for making the best basic crêpes are here.
)
Mix dry ingredients in a bowl.
Make a well in the center, then add the eggs, oil, water, and milk.
Stir with a whisk until smooth or place all ingredients in a blender and buzz until smooth.
Let stand for at least 1 hour, longer is better, even overnight.
Putting Crêpes Together
Lay a crêpe on a plate.
Place a spoonful of the filling down the center of the crêpe
Fold one side of the crêpe over the filling, then the other side, use a toothpick through the center to hold it together if necessary).
Lay in a casserole dish.
Continue until all crêpes are filled.
Sprinkle cheese on the crêpes and place in the oven to melt the cheese and keep the crêpes warm until serving.
Remove from oven, sprinkle each one with chives and a dollop of sour cream!
Notes
For savory-filled crêpes, make the crêpe a little thicker by not adding as much liquid.
Make the filling first, then the crêpes, so the crêpes can be filled when freshly made.
Cook crêpes when the pan is hot.
