    This red cabbage salad recipe or "salade de chou rouge" is a colorful, tasty, crunchy, yet easy salad recipe for you to make at home. Such a simple salad with 3 ingredients to give you a dazzling and colorful starter for your hors d'oeuvres table!

    This red cabbage salad recipe or "salade de chou rouge" is a colorful, tasty yet easy salad recipe for you to make at home.


    Ingredients

    Scale
    • 1 pound/450gram red cabbage
    • 1 tablespoon chopped chives or onion

    For The Vinaigrette à La Moutarde

    • 2 pinches of salt
    • black pepper
    • 2 tablespoon of vinegar - cider or wine, but not balsamic
    • 1 teaspoon of French mustard
    • 3 tablespoon extra-virgin olive oil

    For Garnish: 3 tablespoon sliced radishes


    Instructions

    1. Remove the outer leaves of the cabbage.
    2. It is easier now to cut the cabbage into quarters and cut away the core.
    3. Slice the cabbage very, very thinly.
    4. Sprinkle with salt and leave for about an hour, but up to four is better.
    5. Drain, press out as much liquid as you can, and dry with paper towels or a clean tea cloth. Now when your salad sits in the fridge with the dressing, it will not end up swimming in juice.
    6. Add chives or onions and mix.

    How To Make Vinaigrette à La Moutarde

    1. Put the salt into a bowl together with a little black pepper.
    2. Stir in the vinegar and continue until the salt has dissolved – this is because salt will not dissolve in oil.
    3. Stir in the mustard.
    4. Now add the oil, a little at a time, beating continuously until the dressing is cloudy.
    5. Allow to stand for about 10 minutes, then shake again just before use.
    6. Mix the herbs and the dressing together.
    7. Pour over the cabbage, mix well.
    8. Leave for about an hour before serving.
    9. Garnish with sliced radish.
    10. This is so simple to make but will look stunning on your table.
