A refreshing strawberry sorbet recipe is just what you need on a hot summer's day. Especially this one!
This is a recipe from Provence and is just the easiest recipe I have ever used.
All you need are summer fresh succulent strawberries with some sugar and lemon juice. What could be easier!
A sorbet or 'ices' as they are also called are wonderful for family desserts, anytime treats, or entertaining.
They are especially good for you made with fresh fruit but of course you can use frozen fruit when it is not available.
Another great idea is to fill ice lolly moulds or popsicles with the sorbet for the kids which is a much healthier option and tasty too.

Ingredients
- 4 ½ cup/1 kilogram/2.2 pounds strawberries
- 3 ½ cup/500gram/1 pounds icing sugar
- juice of 1 lemon
- If you find this recipe too sweet, just add a few more strawberries or use a little less sugar next time to start. Sometimes the strawberries are quite sweet themselves, so it is up to you. Some of us have a "sweeter tooth" than others. 😉
Instructions
- Rinse the strawberries and remove their stems.
- Mix to a pulp in a blender or mash by hand.
- Add the sugar and the lemon juice.
- Place in a container and put in the freezer and leave for a couple of hours.
