Beautifully cooked mushrooms, such as these, are a wonderful accompaniment to many dishes. They are easy to prepare, and taste excellent. If the mushrooms need cleaning, it is best to do this was a small pastry brush. Do not wash them.
INGREDIENTS
· 500gm fresh chanterelles or girolles
· ½ lemon
· 50gm unsalted butter
· 3 shallots, peeled and chopped
· 6 sprigs of fresh parsley, finely chopped
· 1 garlic clove, peeled and crushed
·
salt and pepper to taste
METHOD
1. Trim the mushrooms and sprinkle with the lemon juice
2. Melt the butter in a frying pan, add the mushrooms and brown for 10 minutes over a moderate heat, stirring frequently, but carefully with a wooden spatula
3. Add the shallots and parsley, along with the garlic
4. Season with salt pepper
5. Cover and cook for 20 minutes
