Ingredients

  • 1 whole cucumber Use an English cucumber and you won't have to peel it.
  • 1 tablespoon parsley freshly chopped
  • salt
  • Vinaigrette dressing - here is a recipe for French Dressing

Instructions
 

  • The cucumber is usually peeled in France, but you can leave the peel on if you prefer.
  • Slice the cucumber into the thinnest slices you can. A mandolin is used for this in France, or you can use the wonderful attachments you now have with your food processors.
  • Place the sliced cucumber on a large plate and sprinkle with salt.
  • Place another plate on top of them and put a weight on top of this.
  • Leave for about an hour.
  • Drain off the liquid and wash the cucumber in a sieve under cold running water, then dry it.
  • Sprinkle with parsley and the vinaigrette.
