    A cool cucumber salad recipe is easy and a lovely addition to your dinner table. The green of the cucumbers is so refreshing and a tasty nutritious salad to include with your appetizers. What could be more simple to make than this beautiful dish of cool summer cucumbers?

    It will give your table a wonderful display of colour for special occasions or everyday meals.

    Another quick and easy salad recipe to add to your favorite appetizers or starters for all your family and friends.

    It is usually presented in an individual dish, but I have often put it with the tomato salad as the colors together are so pretty and appetizing.

    Your cucumber salad is now ready to serve.

    The green of the cucumbers is so refreshing and a tasty nutritious salad to include with your starters.

    (The time listed above is for the squeezing of juice from the cucumber.)


    Ingredients

    Scale
    • 1 whole cucumber (Use an English cucumber and you won't have to peel it.)
    • 1 tablespoon parsley, freshly chopped
    • salt
    • Vinaigrette dressing - here is a recipe for French Dressing

    Instructions

    1. The cucumber is usually peeled in France, but you can leave the peel on if you prefer.
    2. Slice the cucumber into the thinnest slices you can. A mandolin is used for this in France, or you can use the wonderful attachments you now have with your food processors.
    3. Place the sliced cucumber on a large plate and sprinkle with salt.
    4. Place another plate on top of them and put a weight on top of this.
    5. Leave for about an hour.
    6. Drain off the liquid and wash the cucumber in a sieve under cold running water, then dry it.
    7. Sprinkle with parsley and the vinaigrette.
