- Wipe and dry the fish fillets. If the fillets are not dry, the flour dredge will not adhere to the fish.
- Dip the fish in the seasoned flour, covering the fillets lightly.
- Heat the butter and oil in a heavy-bottomed pan. The butter adds flavor and the oil prevents the butter from burning.
- When the butter is foaming, turn the heat down and put the fish in the pan.
- Cook for about 3 minutes, then turn the fish over and cook the other side until golden brown. This is also a similar pan-fry method to cooking scallops.
- Put the fish on a hot dish, drizzle with lemon juice, and sprinkle with chopped parsley.
- At this stage, quickly wipe out the pan, add 1 ounce butter to the hot pan, and heat until it turns brown.
- Quickly pour over the fish and serve!

Ingredients
- 2 fish fillet large fillet, per person, plaice, sole, flounder or halibut
- 2 tablespoon butter
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 tablespoon parsley Italian or flat, chopped
- ¼ cup seasoned flour for dusting/dredging fish
Instructions
- Wipe and dry the fish fillets.
- Dip the fish in the seasoned flour and cover lightly.
- Heat the 1 tablespoon butter and oil in a heavy-bottomed pan.
- When the butter is foaming turn the heat down and put the fish in the pan.
- Cook for about 3 minutes then turn the fish over and cook the other side until golden brown 3-5 minutes. (Fish is cooked when it easily flakes with a fork.)
- Put the fish on a hot dish, drizzle with lemon juice, and sprinkle with chopped parsley.
- At this stage quickly wipe out the pan add 1 tablespoon butter to the hot pan and heat until it turns brown.
- Quickly pour over the fish and serve!
