You can use Sole fillets for this recipe too as they are ideal for an easy quick meal. I love both plaice and sole so can recommend them for a delicious lunch or dinner. (1 fillet per person)
Ingredients
1 large fillet of fish - either plaice or sole per person
2oz butter and 1 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon chopped parsley
Seasoned flour for dusting the fish
Instructions
Wipe and dry the fish fillets.
Dip the fish in the seasoned flour and cover lightly.
Heat the butter and oil in a heavy-bottomed pan.
When the butter is foaming turn the heat down and put the fish in the pan.
Cook for about 3 minutes and turn the fish over and cook the other side until it is golden brown.
Put the fish on a hot dish and squeeze with lemon juice and sprinkle with chopped parsley.
At this stage quickly wipe out the pan and put 1oz butter in it and heat until it turns brown.
Quickly pour over the fish and serve!
