Tips For Successful Crepes
1. Stir crepe batter with a whisk until smooth, do not beat.
2. Let batter stand for an hour before cooking for best results.
3. Heat pan slowly (use a non-stick crepe pan unless you are experienced) until it is hot about 200°C /400°F.
4. Butter pan quickly and pour in batter. Cook fast or they will be rubbery.
5. When edges start to lift, it is time to turn.
Tip For Savory Crepe Batter
Use
olive oil, vegetable oil or sunflower oil in the batter as each one will enhance your crepes
with a slightly different flavor, your preference.
Try them out by dividing the other
ingredients in half placing each half in a separate bowl and use 2 different oils to see the one you like best.

Spicy Ground Beef Crepes
Spicy ground beef crepes are full of flavor, ease, and lots of enjoyment. This crepe recipe allows for a great deal of creativity and making it your own.
Ingredients
Basic Crepe Recipe
1 cup (100 gr) plain flour
a pinch of salt
2 large eggs
1 tbsp olive oil
1 cup (300 ml) 1 or 2% milk (semi-skimmed milk)
Filling
1 lb/454 gr ground beef
1 medium onion
2 medium garlic cloves
2 cups diced tomato
2 tbsp chives
1 bouquet garni or
a little Espelette pepper to taste
½ cup beer
Sauce
1 tbsp red wine vinegar
1 tbsp sugar
Garnish
A little sour cream and more chives on top.
Instructions
How To Make Basic Crepe Recipe
Mix dry ingredients in a bowl.
Make a well in the center, then add the eggs, oil and 2 tablespoons of the milk.
Stir with a whisk until smooth.
Slowly stir in the remainder of the milk.
Let stand for 1 hour.
Filling
Brown the ground beef in a pan. Place in a bowl, discard the fat and scrap pan.
Place olive oil in pan, add the onions and soften them without browning.
Put the meat back in the pan.
Add the beer and, if needed, add a little water to cover the meat.
Season with salt and black pepper and add the bouquet garni or pepper.
Simmer the meat uncovered until the liquid is reduced.
While the liquid in the ground beef mixture is reducing, make an additional flavorful sauce to add to the beef.
How To Make The Sauce:
Heat the vinegar with the sugar in a small saucepan until it bubbles and forms a dark caramel (watch constantly to prevent burning).
Stir in two tablespoons of boiling water and then add this mixture to the pan, this gives it a good color and added flavor!
Putting It All Together
Lay a crepe on a plate.
Place a spoonful of ¼ of the filling down the center of the crepe.
Fold one side of the crepe over the filling, then the other side.
Lay in a casserole dish.
Continue until all four crepes are filled.
Sprinkle cheese on the crepes and place in the oven to melt the cheese and keep the crepes warm until serving.
