This tomato salad recipe is so simple to make, yet it will give you a bright and colorful display for your hors d oeuvres table or to accompany your family meal. What a quick and inexpensive way to produce such a beautiful and healthy side dish. Perfect fruits make a divine dish!

❤️About This Recipe

I love this recipe because it has all the features I love in a salad. Simplicity can be divine in salad creation and this one has that.

First, fresh tomatoes, then mild onions or chives, and thirdly, a lovely blend of herbs parsley, and a little basil.

Then an easy salad dressing of red wine vinegar or lemon juice mixed with olive oil and a little salt and pepper.

Just, add this little salad to your family table as a side dish for your everyday meals, a quick and healthy addition for everyone.

Or a brilliant shock of color to an hors d'euvres table or buffet.

Also, it is a good way to eat up these beautiful fruits when they are in season and you can buy them cheaply or your tomato plants are heavy with bounty.

📝Ingredients

  • Firm ripe tomatoes cut in wedges, I love cherry or grape tomatoes of various colors because they make a lovely show.
  • A few slices of mild onion or chives
  • Chopped fresh parsley, and basil

Basil Vinaigrette Dressing

  • olive oil or avocado oil
  • fresh lemon juice
  • red wine vinegar or apple cider vinegar
  • Maple syrup or honey
  • finely chopped basil leaves
  • garlic minced
  • salt
  • freshly ground black pepper

🔢Instructions

  • Make the dressing first by mixing the oil, lemon juice, vinegar, and maple syrup or honey in a bowl with a whisk until well blended and lemony colored.
  • Then stir in the basil, garlic, salt, and pepper, and let sit on the counter while you prepare the salad base and the rest of the meal.
  • Wash and slice tomatoes in half through the width if using small tomatoes or cut larger ones in wedges.
  • Place them in a bowl that you will serve the salad in.
  • Place a few onion rings or chopped chives over the top of the tomatoes and sprinkle with the parsley.
  • Just before serving drizzle the dressing over the tomato salad base and stir well.

Ingredients

  • 1 pound/450 gram firm ripe tomatoes or grape or cherry tomatoes of various colors make a lovely show
  • A few slices of a mild onion or chives
  • 1 tablespoon chopped fresh parsley

Basil Vinaigrette Dressing

  • ½ cup olive oil or avocado oil
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons red wine vinegar or apple cider vinegar
  • 1 teaspoon maple syrup or honey more if needed
  • 3 tablespoons finely chopped basil leaves
  • 1 clove garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
