Le Tourin D’Ail Doux
This is a delicious recipe for garlic soup that garlic lovers will revel in! It is easy to make with garlic, onions, olive oil, an egg, and chicken broth. The allium family is beneficial to one's health and the secret is to use only the freshest cloves of garlic, no "brown" before browning in the sauté pan! 😉

This recipe is from the Dordogne, but there are variations on this theme across much of southern France.
For some years, garlic lovers have gathered each February at Villeréal in the Lot-et-Garonne, south-east of Bergerac, to celebrate the art of preparing, and tasting the tourin, also known as le tourin d’ail doux.
In many areas, it is normal to pour a little red wine into the bottom of each person’s soup plate first, a practice known as Chabrol, this is definitely something to try!
And in the south of France, it is traditional to serve tourin to newlyweds.
Here is an alternative recipe for garlic soup that you may find milder if this is not your taste. But I love it!

- garlic
- onion
- olive oil
- flour
- water or chicken broth
- egg
- salt and pepper
- white vinegar or white wine vinegar
🔢Instructions
- Peel the garlic cloves. The quickest way is to drop the cloves into boiling water for about 1 minute, then run cold water over them and peel.
- Chop garlic and onions if using into small pieces.
- In a frying pan, brown the chopped garlic (or optionally, an equal mixture of chopped onions and garlic) in the olive oil.
- Add the flour.
- Mix well, then cook for a moment.
- Stir in the water gently, and cook for 20 minutes, stirring often to prevent the flour from lumping.
- If you want a smooth creamy soup, pour the garlic, onion mixture into a blender or use an immersion blender right in the pot to puree soup.
- Separate the egg. Place the egg yolk in a separate dish and mix in the pepper, and vinegar.
- Add the egg white to the soup while stirring quickly with a whisk, so that no large pieces of egg white form.
- Cook for another 5 minutes.
- Remove from heat and add the egg yolk mixture, again, stirring to avoid coagulation.
- Place thin slices of bread in each soup bowl, and pour the soup on top. Serve hot. Or use the suggestions below.
