Homemade tomato soup from tomato puree and fresh tomatoes.

A bowl of French tomato soup turns ripe tomatoes and a good stock into comfort in a bowl! This potage aux tomates starts with a smooth tomato purée, then simmers gently with beef bouillon. A little semolina gives it body without cream, while onion, garlic, and herbs bring out the tomatoes' sweetness.

For the foundation, make my tomato coulis recipe or one of my mother sauces, sauce tomat. Prefer a meat-free bowl? Make a quick homemade vegetable stock, makes an easy swap for the beef stock.

What Is French Tomato Soup?

French tomato soup, or potage aux tomates, is a smooth soup made here with tomato purée, stock, and a little semolina for light thickening. This version builds its flavor with onion, garlic, and marjoram or basil. Easy beef stock gives it a savory finish or switch it out for a meat-free alternative with vegetable stock.

Make the purée from scratch when tomatoes are plentiful, or start with a batch you have already prepared. Either way, keep some crusty bread nearby; the last spoonful deserves company.

Below, you'll find the ingredient choices, cooking steps, and small finishing touches that help this simple soup taste rounded and full of flavor.

Key Ingredients

A labelled ingredient picture of tomato soup recipe.

The tomato base does most of the work, so choose tomatoes and stock you enjoy tasting on their own.

For the tomato base: Use prepared homemade purée, and ripe tomatoes, onion, garlic, olive oil, and herbs.

  • Tomato purée: A smooth, cooked tomato base gives the soup its color and concentrated tomato flavor; this means purée, not concentrated tomato paste.
  • Beef stock: A well-flavored stock adds savory depth without cream; vegetable stock works for a vegetarian version.
  • Semolina: This wheat ingredient lightly thickens the broth while keeping the soup easy to spoon.

NOTE: See recipe card for a full list of ingredients and quantities.

Substitutions For French Tomato Soup

These swaps keep the soup close to the original while accommodating what you have.

  • Vegetable stock for beef stock: Use the same volume for a vegetarian or vegan soup, checking that your prepared tomato base is also suitable.
  • Tomato sauce for purée: The recipe gives 1½ cups tomato sauce as an alternative to 2 cups purée. Choose a simple sauce and adjust the herbs and salt to suit.
  • Basil for marjoram: Either dried herb works in the homemade base; use the original ¼ teaspoon.

Variations For Smooth Tomato Soup

Keep the tomato base the same and try one of these simple finishes.

  • Fresh basil finish: Stir in a little torn fresh basil just before serving for a brighter herbal aroma.
  • A gentle chili kick: Add a small pinch of chili flakes with the garlic when making the purée, then taste before adding more.

Kitchen Tools & Equipment

A smooth base and steady heat make this soup easier to get right.

  • Heavy-bottomed saucepan: Distributes heat evenly as the tomato base reduces; stir along the bottom to prevent sticking.
  • Fine sieve: A sieve removes skins and seeds for a finer texture.
  • Immersion blender: An immersion blender purées the vegetables directly in the pan.

How To Make French Tomato Soup

Make the tomato base, if needed
1. Gently cook the finely chopped onion in olive oil for about 5 minutes.
2. Add the chopped tomatoes, garlic, dried herbs, and optional orange peel. Season lightly. Cover and simmer for about 20 minutes, until the tomatoes have broken down.
3. Remove the orange peel, if used. Press the mixture through a sieve or purée it with an immersion blender, then return it to the pan and reduce until thick. Measure the finished base: you need 2 cups of purée for the soup.

Finish the soup
4. Combine the measured purée with 4½ cups beef or vegetable stock. If using the original sauce alternative, use 1½ cups tomato sauce instead of the purée.
5. Bring to a boil, then lower the heat and simmer gently for about 30 minutes.
6. Sprinkle in 2½ tablespoons semolina gradually while whisking. Continue cooking gently, stirring, until the grains are tender and the soup thickens slightly; follow your semolina's package cooking guidance.
7. Taste and adjust the salt and black pepper. Serve with crusty bread or garlic croûtons.

Secrets From Judith's Kitchen For French Tomato Soup

Two small checks make a noticeable difference to the finished bowl.

  • Measure after reducing: Tomato water content varies. Measure the finished purée before combining it with stock so the soup keeps the intended balance.
  • Taste before sweetening: Let the tomatoes cook down first. If the base still tastes sharp, add only a small pinch of sugar, taste, and stop as soon as the flavors feel balanced.

Hint: Label prepared purée with its measured volume before freezing it, so you know how much you have for the next batch.

Expert Chef Top Tip

Sprinkle the semolina in slowly while whisking, then cook until tender. Adding it all at once is an invitation to lumps.

What To Serve With French Tomato Soup

Serve this soup with something crisp or crusty to contrast with its smooth texture. Try warm baguette slices, garlic croûtons, or a simple green salad with a light vinaigrette.

Best Wine To Pair With French Tomato Soup

A dry rosé is a pleasant starting point: its freshness suits the tomatoes without overwhelming the light texture. Pour a small taste alongside the soup and choose a wine whose acidity feels balanced with your tomato base.

French Tomato Soup FAQ

What is French tomato soup made from?

French tomato soup in this recipe combines tomato purée, beef or vegetable stock, and a little semolina. The homemade purée contains tomatoes, onion, garlic, olive oil, and herbs.

Can I make French tomato soup with prepared tomato sauce?

French tomato soup can use 1½ cups of simple tomato sauce instead of the original 2 cups of purée. Taste before adding extra herbs or salt, because prepared sauces vary.

How do I thicken French tomato soup without cream?

French tomato soup gets a little body from semolina. Sprinkle it in while whisking, then simmer until the grains are tender; the result should stay spoonable, rather than turn into a thick porridge.

Can French tomato soup be vegetarian or vegan?

French tomato soup can be vegetarian or vegan when you replace beef stock with vegetable stock and use a suitable tomato base. The recipe itself does not require cream or butter.

Is French tomato soup gluten-free?

French tomato soup made with semolina is not gluten-free because semolina comes from wheat. Omit it for a thinner version and check the stock and other packaged ingredients for gluten.

Equipment

  • heavy-bottomed pot

Ingredients

  • 2 cups prepared fresh tomato purée about 473 ml, OR 1½ cups tomato sauce (about 355 ml), with or without herbs. Use one option.
  • 4½ cups beef bouillon or beef stock about 1.06 liters; vegetable stock is the original vegetarian alternative.
  • 2½ tablespoons semolina. Preserve the volume measure; do not substitute a guessed gram weight.
  • Salt and black pepper to taste.

Homemade Purée Base

  • 1 onion finely chopped.
  • 1 tablespoon olive oil 15 ml.
  • 1 garlic clove crushed or finely chopped.
  • 1 lb plum tomatoes 454 g, roughly chopped.
  • ¼ teaspoon dried marjoram or basil.
  • A little salt sugar, and black pepper, to taste.
  • Optional: a ½-inch strip of orange peel about 1.3 cm, avoiding the white pith.

Instructions

Make The Base If Needed:

  • Gently cook the onion in the olive oil for about 5 minutes.
  • Add the tomatoes, garlic, herbs, optional orange peel, and a little seasoning. Bring to a simmer, cover, and cook for about 20 minutes, until the tomatoes soften and break down.
  • Remove the orange peel. Press the mixture through a sieve or purée with an immersion blender. Return to the pan and reduce until thick. Taste before deciding whether a small pinch of sugar is needed.
  • Measure 2 cups of finished purée for the soup. The base yield needs confirmation; do not assume the stated tomato quantity always produces 2 cups.

Finish The Soup:

  • Combine the stock and measured purée in a heavy-bottomed pan. Alternatively, use 1½ cups tomato sauce in place of the purée.
  • Bring to a boil, lower the heat, and simmer gently for about 30 minutes.
  • Sprinkle the semolina in gradually while whisking. Continue cooking gently and stirring until tender and lightly thickened, following the product's cooking guidance.
  • Adjust the salt and black pepper, then serve with crusty French bread or garlic croûtons.

Notes

  • You can use my Simple Tomato Purée Recipe or Easy Tomato Sauce Recipe, keeping in mind to use less sauce and optional seasoning.
  • Use tomato purée rather than concentrated tomato paste.
  • Use either prepared purée/sauce or the ingredients for making the base; do not count both as separate additions.
  • Tomato ripeness and water content affect the finished purée yield and reduction time.
  • Semolina contains wheat. Omit it for a thinner gluten-free version and verify the remaining ingredients are gluten-free.
