What could be more simple to make than this beautiful dish of cool summer cucumbers? It will give your table a wonderful display of color for special occasions or everyday meals.
The cucumber is usually peeled in France, but you can leave the peel on if you prefer.
Slice the cucumber into the thinnest slices you can. A mandolin is used for this in France, or you can use the wonderful attachments you now have with your food processors.
Place the sliced cucumber on a large plate and sprinkle with salt.
Place another plate on top of them and put a weight on top of this.
Leave for about an hour.
Drain off the liquid and wash the cucumber in a sieve under cold running water, then dry it.
