  • plain flour
  • salt
  • eggs

  • a little Espelette pepper: adds a touch of heat.
  • dark beer
  • garlic cloves

  • red wine vinegar: adds a little tang.
  • sour cream and chives: for topping.
  • cheese of your choice, cheddar, or mozzarella to sprinkle on top.

🔄Substitutions

  • Use ground turkey, ground chicken, or chopped ham instead of ground beef.
  • Use up leftovers in place of the crêpe filling given in this recipe.

🔢How To Make Savory Crêpes

For The Crêpes

  1. Stir crêpe batter with a whisk until smooth; do not beat.
  2. Let batter stand for an hour before cooking for best results.
  3. Heat pan slowly (use a non-stick crêpe pan unless you are experienced) until it is hot about 200°C /400°F.
  4. Butter pan quickly and pour in batter. Cook fast, or they will be rubbery.
  5. When edges start to lift, it is time to turn.

Top Tip For Savory Crêpe Batter

Use olive oil, vegetable oil, or sunflower oil in the batter as each one will enhance your crêpes with a slightly different flavor, according to your preference.

Try them out by dividing the crêpe ingredients in half or thirds each in a separate bowl and mix a different oil in each one to see the one you like best.

  1. Step 1: Brown the ground beef in a pan. When completely cooked place in a bowl, discard the fat and scrape pan.

  1. Step 3: Put the meat back in the pan, add the beer, and if needed, add a little water to cover the meat. Season with salt and black pepper

  1. Step 5: Add all the other vegetables, mix, and continue to simmer gently, stirring occasionally. While the liquid in the ground beef mixture is reducing, make an additional flavorful sauce to add to the beef.

  1. Lay a crêpe on a plate.
  2. Place a spoonful of the filling down the center of the crêpe. (You could also use the filling and crêpe in this recipe in the same way that Best Easy Apple Pie Filling Galette is made!).
  3. Fold one side of the crêpe over the filling, then the other side, and use a toothpick through the center to hold it together if necessary.
  4. Lay in a casserole dish.
  5. Continue until all crêpes are filled.
  6. Sprinkle cheese on the crêpes and place in the oven to melt the cheese and keep the crêpes warm until serving.
  7. Remove from oven, sprinkle each one with chives and a dollop of sour cream!

Ingredients

Batter

  • 1 cup plain flour
  • a pinch of salt
  • 2 large eggs
  • 1 tablespoon olive oil
  • ⅓ cup water
  • 1 cup 1% or 2% milk semi-skimmed milk

Filling

  • 1 lb ground beef
  • 1 medium onion
  • ½ cup beer plus a little water if needed
  • 1 bouquet garni or
  • 1 teaspoon Espelette pepper
  • 2 garlic cloves
  • 2 cups diced tomato
  • 2 tablespoon chives
  • ½ cup chopped celery
  • 1 tablespoon red wine vinegar
  • 1 tablespoon sugar
  • ½ cup sour cream topping
  • 1 tablespoon chives topping
  • ½ cup grated cheese of your choice cheddar, mozzarella.

  • Mix dry ingredients in a bowl.
  • Make a well in the center, then add the eggs, oil, water, and milk.
  • Stir with a whisk until smooth or place all ingredients in a blender and buzz until smooth.
  • Let stand for at least 1 hour, longer is better, even overnight.

Putting Crêpes Together

  • Lay a crêpe on a plate.
  • Place a spoonful of the filling down the center of the crêpe
  • Fold one side of the crêpe over the filling, then the other side, use a toothpick through the center to hold it together if necessary).
  • Lay in a casserole dish.
  • Continue until all crêpes are filled.
  • Sprinkle cheese on the crêpes and place in the oven to melt the cheese and keep the crêpes warm until serving.
  • Remove from oven, sprinkle each one with chives and a dollop of sour cream!

Notes

  • For savory-filled crêpes, make the crêpe a little thicker by not adding as much liquid.
  • Make the filling first, then the crêpes, so the crêpes can be filled when freshly made.
  • Cook crêpes when the pan is hot.
